The Buvologists

“Yannick Cadiou tends his vines like others tend their gardens. With care and meticulousness, he has created a small range of Chablis wines that reflect their terroirs.”

PETIT CHABLIS

Planted in 1996 on poor soil in the commune of Lignorelles, its juice sparkles with a clear gold. The nose hints at rubbed limestone. The initial richness (but not broadness) on the palate is enlivened by a tonic effervescence that stimulates the taste buds. But where are the oysters?

CHABLIS OUR FAVORITE

This is a 78-are plot located opposite the Premier Cru "Vaillons." Its pale gold color releases a pure Chablis nose with shellfish aromas, almost like sea spray… Mmm. Its lemony flesh is full but not acidic. Perfectly ripe. It's this vinosity that awakens your primal senses. A distinctive flavor to share. One of the finest Chablis tasted from this vintage.

CHABLIS "THE GOLDEN COAST"

This Kimmeridgian vine is nestled beneath the Premier Cru vineyard of Montmains. From this marly soil, it has acquired a floral character with a secondary nose of damp marl. The juice is enveloped in richness before releasing a saline punch that elevates it to Premier Cru level with its persistence. After a winter of patience, it will be at its peak!
