Chablis "La Côte d'Or" 2023
"...This Chablis bears the cadastral name of its terroir. All its elegant flavor comes from its soil. A pure Kimmeridgian..."
...will set your taste buds right.

In the world of wine, I met some passionate people...

"They are in love with a place, an atmosphere, a childhood scent. This same scent, this same atmosphere persists in their minds until they return, sometimes 25 years later, to replant this land of their grandfather, or even that of an angry father, a father they no longer spoke to. On his deathbed, in a final phone call, he told you, 'If you want, it's yours.'"
Like a desire for it to never end, like a reason for being. Passionate individuals who have created, replanted, blended wines, grape varieties... whites, reds... unknown, forgotten. I've been fortunate enough to know them, from Burgundy to the Vendée, from Languedoc to the rugged slopes of Champagne.
Many of them put their heart and imagination into producing a beverage that was sometimes unknown, but this beverage has a virtue: that of bringing us together.
This is partly what the world of these winemakers is about; it is above all about passion.
They roll in the mouth, these Burgundies, these Muscadets… these great reputations and those which are smaller and which are all the more deserving.
Drawing from nature, building this beautiful project with it, extracting minerals from these soils, aromas and tannins from these grape varieties, combining them with wood, with an amphora, aging them on their lees…
It's infinite, and that's what's incredible…"
